Ingredients

  • 1 (9 inch) unbaked pie crust
  • 4-5 medium apples - peeled, cored and cut into slices about 2 cm thin
  • ¾ cup white sugar
  • 1 tablespoon cinnamon powder
  • ¼ cup butter
  • 3 eggs - beaten
  • 2 tablespoons apple juice - optional
  • ½ cup all-purpose flour
  • 1 tablespoon vanilla extract
  • ½ cup raisins

Instructions

  • Preheat the oven to 390°F/200°C.
  • Take ¼ cup of the sugar and mix with cinnamon and mix with the sliced apples. Set aside.
  • Press the pie pastry into the bottom and up the sides of a 9-inch pie plate. Flute the edges if desired. Arrange the apple slices in the pie crust in layers starting from outside circle going to the center, lying half on top of the other.
  • In a medium bowl, mix the butter and 2/4 cup sugar together until smooth, then beat in the eggs one at a time until light and fluffy. Stir in flour, apple juice and vanilla. Mix in the raisins. Pour over the top of the apples.
  • Bake for 10 minutes then reduce to 325°F/175°C for 50 minutes in the preheated oven, until apples are soft and custard is set in the center. Cool completely before slicing and serving.
  • Serve it ala Mode with your favorite vanilla ice cream while the pie is still warm.
