This Filipino tomato-based pork stew is a comforting family meal that is so simple and easy to make yet so flavorful and delicious. It is the perfect go-to recipe during those busy weeknights as you can cook this recipe using one pan in under an hour. You can also easily increase the serving for a much bigger crowd and is a great dish to serve during fiestas, family gatherings, or special occasions.
What is Pork Guisantes?
Pork Guisantes is also called Pork and Peas as 'guisantes' translates to green peas in Spanish. Basically, Pork Guisantes is cooked by simmering the pork strips in tomato sauce until tender and then adding the peas and bell peppers.
It is somewhat similar to Menudo but with fewer ingredients which is why it is more budget-friendly. In this recipe, I used diced tomatoes instead for a chunkier and fuller flavor.
Ingredients You'll Need
Pork - I used tenderloin in this recipe as it needs lesser time to cook. Remember never to overcook tenderloin to retain its juiciness and tenderness. You may also use sirloin or pork shoulder/butt as substitutes, although you may need to increase the cooking time as these pork parts are slightly tougher compared to tenderloin.
Green peas - are one of the main ingredients of this recipe. If frozen green peas or sweet peas are unavailable, you may use canned green peas. Just make sure to rinse it with running water to wash off the brine.
Diced Tomatoes for a chunkier sauce but you may use tomato sauce.
Fish sauce - adds a savory flavor and salty umami to the dish. If not available seasalt is fine.
Red bell pepper adds a sweet, slightly citrusy flavor to the dish. It adds a pop of color too!
Water - For a deeper flavor of the stew, you may use beef or pork broth in place of water.
Onion, garlic, and bay leaves were the aromatics used in this recipe.
Foxy Tips in cooking Pork Guisantes
- If you are using pork shoulder or sirloin, cut it into smaller pieces. Also cut the meat against the grain for a more tender chew. You may also use ground meat, to avoid the hassle of cutting the meat,.
- Not a fan of pork? Replace it with chicken or beef.
- You can add other vegetables like carrots, green bell peppers, garbanzos, or even potatoes. Not only does it extend the serving of the dish, but also adds color, texture, and flavor.
How to Serve and Store
Enjoy Pork Guisantes with steamed white rice as a main dish for a hearty lunch or dinner. You may also serve it with bread for a lighter meal.
Store leftovers in a container with a tight-fitting lid and place them in the refrigerator for up to 3-4 days or freeze for up to 2 months.
To reheat, you may pop it in a microwave until heated through or you may place the leftovers in a saucepan over a stove on medium heat. Add water to help dilute the thickened stew.

Ingredients
- 2 tablespoons oil
- 1 medium yellow onion finely chopped
- 3 cloves garlic minced
- 500 grams pork tenderloin cut into 2-inch strips
- 2 tablespoons fish sauce
- 1 can diced tomatoes 14.5 ounces
- 2 pieces bay leaves
- 1 cup water
- 1 large or 2 small red bell pepper cut into strips
- 1 cup frozen sweet peas or green peas thawed
- salt and pepper to taste
Instructions
- 2 tablespoons oil, 1 medium yellow onion, 3 cloves garlicIn a deep skillet, saute onion and garlic in oil over medium heat until limp and aromatic.
- 500 grams pork tenderloin, 2 tablespoons fish sauce, 1 can diced tomatoes, 2 pieces bay leavesAdd the pork and then the fish sauce, cook until all sides are no longer pink. Pour in the diced tomatoes and add the bay leaves. Cover and cook for 5 minutes or until tomatoes can easily be mashed with the back of a spoon.
- salt and pepperSeason with salt and pepper to taste.
- 1 cup waterPour 1 cup water and bring to a simmer. Cover and cook for 10-15 minutes or until pork becomes fork-tender and the liquids are again reduced.
- 1 large or 2 small red bell pepper, 1 cup frozen sweet peas or green peasThen add the peas and bell pepper. Simmer for 5 minutes more just until they are cooked.
- Remove from heat and transfer to a serving plate.
- Serve hot with steamed rice.
