Very Chocolate Cake in Marshmallow Fondant -part III

Very Chocolate Cake in Marshmallow Fondant -part III

Designing Fondant Cake without the fondant tools. This is the last of a three-part post on my Very Chocolate Cake in Marshmallow Fondant, the first ever fondant cake I made (and hopefully not the last). I wrote about the recipe I used for the Very Chocolate Cake and How to make Marshmallow Fondant (MMF) and now I would like to share how I designed the cake. It is not perfect of course but not bad for a beginner if I may say so myself. ;-) and hopefully it can help those who are also…Read more→
How to divide a cake- easily, evenly and less messy?

How to divide a cake- easily, evenly and less messy?

I have been using this technique when cutting my cakes  and maybe some people already know about it but just in case others have not heard of it yet, here is how I cut my cake evenly and you will see without so much crumbs and you will see how really easy it is. All you need is...a thread and maybe a ruler if you are too particular and exacting and a toothpick! Works well with small, big, tall, flat cakes! Have fun! Can't see my video? Click here.Read more→
What to do with leftover egg whites?

What to do with leftover egg whites?

A quick practical baking / cooking tip. Last Christmas, my Schwiegermutter  (mother-in-law) and I made some bottles of Eierlikör, the german equivalent of eggnog, as giveaways. We had a lot of leftover egg whites and I, being practical, cannot find it in my heart to just throw them away. So what does one do with so many leftover egg whites? Actually there are a lot of ways to use them, like make some meringue or marshmallow  or use it to make french macarons, coconut macaroons, egg white omelette or even angel food cake. But…Read more→
How to bake a moist cake or cupcakes?

How to bake a moist cake or cupcakes?

Do you ever wonder why some cakes or cupcakes are dry? It´s like eating cotton or saw dust, you need to drink in between bites or you´ll choke!!!   One time I gave my neighbor some cupcakes (I usually tend to baked too much). She came back to me the next day asking how was it that they are moist unlike when she makes them herself, her own daughter complains that it is always dry. I like cakes and cupcakes that are a bit moist. But how do you achieve this? Is…Read more→
How can you make cake bake evenly all the time???

How can you make cake bake evenly all the time???

It is annoying when after having found a perfect cake recipe and doing all preparations meticulously, then only to see the finish product to be not as perfect as it should look. Either they turn out lopsided or have a 'dome' in the center because of uneven rising during baking. I read somewhere that others use flower nails, like the one in the picture on the right, and place it upside-down it in the middle of the pan. They say it evens out the heat while baking and avoid that the sides to bake faster…Read more→
Preparing pans before baking

Preparing pans before baking

Most recipes call for the pans to be greased and floured prior to baking as this will prevent the cake from sticking to the sides and bottom of the pan. I have tried the greasing and flouring method and it worked fine for me...until I learned about greasing and lining method! It is more hassle free than the grease and flour method. For one, the cake will not have the added flour that will turn out as crumbs all around the cake when baked which could sometimes make a bit of mess if…Read more→
Ingredient Alternatives

Ingredient Alternatives

I know it is sometimes difficult to find certain ingredients that some of the recipe requires. And it could be disheartening and discouraging for others to try on making or creating dishes or pastries that they really like because the ingredients are not available in their local market. So I thought I make a list of alternatives for some ingredients you can use for baking or cooking:   Alternative for Buttermilk Buttermilk is common here in Germany and is really cheap. But one time I was planning to make a Marble Cake and…Read more→
